Dessert Diva Danette Randall stopped by News Channel 8 and showed Melissa and Evan a tasty treat she likes to make for the horse racing event.
NO BAKE NY STYLE CHEESECAKE BITES
4 TBLS unsalted butter (melted)
¼ cup brown sugar
1/3 cup graham cracker crumbs plus 2 tbls ( approx. 3-4 whole crackers)
8 OUNCES cream cheese (room temp)
¼ cup powdered sugar
1 tsp lemon juice
½ tsp vanilla
2 tsp sour cream
½ cup heavy cream
Powdered sugar for garnish
In small bowl, mix all ingredients for crust. Line a mini muffin tin with baking cups. Using a teaspoon, divide crust between each muffin cup, press firmly, to make a thick base (if you have extra, I made small parfaits out of this dessert as well) Put tin in refrigerator.
In a medium bowl, beat cream cheese and powdered sugar until smooth. Add in lemon juice, vanilla, sour cream and heavy cream, mix until smooth and fluffy. Divide cream cheese batter between the mini baking cups. Put in refrigerator for 2-3 hours, or overnight. When ready to serve, top with sliced strawberry, and a dusting of powdered sugar.
NOTES: I made 6-7 cheesecake bites, and then using a small glass (or small clear plastic cup) I made the rest parfait style. You can do both, one you just need a spoon for! You can top with a different type of berry if desired. IF you don’t have a mini muffin tin, you can use a regular size, it will just be bigger than bite size, but still look cute.
