TAMPA, Fla. (WFLA) – Dessert Diva Danette Randall stopped by News Channel 8 and showed Gayle and Melissa how to make a boozy and sweet treat that she says “everybody should make.”
BOURBON BUTTER COOKIES
2 cups flour
½ tsp salt
½ tsp baking powder
3/4 cup unsalted butter (room temperature)
1 cup granulated sugar
1 tsp vanilla
2 tbls bourbon ( I used Four Roses Bourbon, single barrel)
Pecan halves for topping of each cookie (approx. 22-26, depending on how big you make the cookies)
Powdered sugar for dusting cookies
Preheat oven to 350
In small bowl, mix together flour, salt, and baking powder. Set aside
In large bowl, cream butter, and sugar until light and fluffy. Add egg, and mix well. Stir in vanilla, and bourbon.
Add flour mixture to wet mixture, stir until well combined. Dough will be a bit crumbly, but it will all come together. Scoop out approx. 1 tablespoon of dough, and place on ungreased baking sheet. Place one pecan half on top of each ball of dough. Bake for 10-12 minutes. When cookies are done, take off baking sheet and place on waxed paper, sprinkle with powdered sugar when hot, and then another time when cooled. Enjoy!
NOTES: if you want a bourbon glaze on your cookies, just mix a little powdered sugar and a little bourbon, then drizzle over cookies. If you want a non alcoholic glaze, use powdered sugar and milk. IF you want to omit alcohol from recipe, just use 2 tsp. of vanilla instead of one, and don’t put in bourbon.
