One of the best parts of the holiday season is the food! With all the diversity here in our part of Florida there are plenty of holiday foods from Latin America. There are certain dishes that will have you saying Vamos Tampa Bay!
Christmas Day may still be several days away, but at Liborio’s Latin Cafe they are filling up with orders to cater holiday parties!
“We start taking orders now, and then for the 24th we close at 4 o’clock in the afternoon. So we do double shift every time. Twenty-six employees work all at the same time,” says Nelson Castellano, the owner of the restaurant.
Every day they serve customers a variety of Latin American foods, but for the holidays there are some dishes that are traditional traditions.
There are empanadas.
“We do the meat ones. We do the chicken. We do the guava and cheese. We do one that is like a pizza. Like a calzone,” says Castellano.
For the main dish, Pernil, which is slow roasted marinated pork leg or shoulder.
“Cubans, Dominicans, Puerto Ricans they do that. People from Costa Rica they do it as well,” says Castellano. “And on New Year’s Eve. New Year’s Eve, the 31st. That is when we do this.”
And for dessert churros!
