(WFLA) — Since the weather is finally cooperating, WLFA News Channel 8’s Lila Gross put together some of her favorite soup recipes to celebrate National Chicken Soup for the Soul day.
Traditional Chicken Noodle Soup
Allrecipes.com said to in a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender for 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.
Mmm.. almost as good as Grandma’s.
Spicy Chicken Tortilla Soup
Thepioneerwoman.com said mix cumin, chili pepper, garlic powder and salt. Add onions, red pepper, green pepper, and minced garlic. Pour in chicken, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
The toppings to this soup are the best part including, sour cream, diced red onion, diced avocado, pico de gallo, grated cheese and jalapenos.
Coconut Curry Chicken Soup
Afarmgirlsdabbles.com said to saute the butter and onion, add the curry paste and stir to combine. Then add the garlic, ginger, red bell pepper, mushrooms, chicken broth, coconut milk, fish sauce, curry powder, brown sugar, red pepper flakes and chicken. Stir to combine and cook until thoroughly warmed. For a healthy, and new twist on a classic, this is a good option for soup with a kick.
Lemony Kale and White Bean Soup
Forkknifeswoon.com said to add butter, onion, garlic and herbs. Then some lemon juice and stock, stirring to combine. Add the white beans and torn kale leaves, and continue to simmer until warmed through, about 3-5 minutes.
Serve with crusty warm cheesy bread for that soul food finish.
