Grilled Sausage over Chipotle Potato Salad

This recipe would make a great sandwich! Place the sausage on a bun and top it with potato salad.
2 lb petite red potatoes, sliced
1 medium yellow onion, sliced
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
2 teaspoons ground coriander, divided
4 green onions
4 links fully cooked smoked chicken sausage
4 hard-boiled eggs, sliced
1/2 cup mayonnaise
1/4 teaspoon pepper
2 tablespoons chipotle hot sauce
2 tablespoons garlic-spice paste
1 tablespoon fresh Italian parsley
1. Preheat grill (or grill pan). Cut potatoes into thirds and yellow onion into 1/2-inch-thick slices; coat with oil, salt, and 1 teaspoon coriander. Remove root end from green onions.
2. Place sausage, potatoes, yellow onions, and green onions on grill and cover; cook 5 minutes, turning occasionally. Move potatoes and green onions over indirect heat, then continue to grill sausage, potatoes, and all onions 4–5 more minutes, turning occasionally, or
until potatoes and all onions are tender and sausage is 165°F (green onions should be very charred). Let sausage stand 3 minutes before slicing.
3. Slice eggs. Chop yellow onions into bite-size pieces. Chop green onions finely.
4. Combine in large bowl: mayonnaise, pepper, chipotle hot sauce, garlic paste, green onions, and remaining 1 teaspoon coriander; add potatoes, eggs, and yellow onions. Chop parsley. Serve sausage over potato salad, sprinkled with parsley.
