Smoked Bologna for National Bologna Day with Jennifer A. Daskevich
Today is National Bologna Day!! What better way to celebrate then to smoke your own Bologna at home. Bologna Sandwiches have been a favorite of Americans for decades. In fact, Americans eat about 800 million pounds of bologna a year. That’s almost three pounds for every American.
Take your bologna to the next level by smoking it up with this simple home smoker.
Buy a whole “chub” of bologna from the grocer. Remove the skin. With a pairing knife score the chub in crisscross diagonals all the way around the chub. Rub generously with your favorite barbecue rub.
Buy wood chips from your local home store (Lowe’s or Home Depot). I used hickory and apple. Put in a single layer in a roasting pan and fill with water and let sit for an hour. Pour out excess water leaving a slight film on the botton. Pre-Heat oven to 225. Put a roasting rack inside the pan and place your Bologna on top. Create a tin-foil wrapping around the roasting pan all the way around the bottom and high enough on top to create a dome to seal on top with enough air for the smoke to circulate. Smoke for about two hours. (The bologna is already cooked so we are just infusing flavor into the Chub.
Once it is smoked make a grilled cheese, eggs benedict, a “BLT” or simply add it to your charcuterie.
