1 SMALL ONION CUT INTO ¼ INCH DICE

6 OZ MEXICAN CHORIZO

1 TOMATO CORED AND SEEDED AND DICE SMALL

½ CUP MEXICAN BEER (MODELO,CORONA,TECATE BEER)

PINCH KOSHER SALT

2 JALAPENOS SEEDED AND MINCED

2 TBSP OLIVE OIL

SERVED WITH WARM CORN TORTILLAS OR CHIPS

HOW TO MAKE : IN LARGE SAUCE PAN HEAT OIL ADD CHORIZO COOK FOR 3 MINUTES,ADD ONION,TOMATO AND JALAPENOS COOK FOR 5 MINUTES OVER MEDIUN HEAT,ADD BEER AND COOK STIRRING FREQUENTLY UNTIL REDUCES BY HALF ADD CHEESE AND STIR UNTIL CHEESE MELTS TRANSFER TO A SERVING BOWL GARNISH WITH CHOPPED CILANTRO AND SERVED
