Daytime Recipes Greek Salad Dip on Gluten-Free Crackers

Chunky Greek Salad
  • 4 medium vine-ripened tomatoes, quartered and sliced
  • 1/2 small English cucumber, cut into chunks
  • 1/2 green bell pepper, diced
  • 1/2 small red onion, diced
  • 1/2 cup (125 ml) pitted kalamata olives
  • 4 oz (115 g) crumbled feta cheese
  • 2 tsp (10 ml) Dijon mustard
  • 1/4 cup (60 ml) olive oil
  • 3 tbsp (45 ml) red wine vinegar
  • 1 tsp (5 ml) dried oregano salt and pepper

Preparation

1. Prepare vegetables and place in a medium size bowl.
2. Mix dressing ingredients together in a separate bowl and pour over vegetables.
3. Add crumbled feta cheese and serve with Boulangerie Grissol Rustic Flatbreads.

Makes 6 appetizers
