What criteria do restaurant inspectors use?

Florida inspectors visit hundreds of restaurants each week to make sure food safety and sanitation rules.

You might be wondering what type of criteria inspectors use when they visit restaurants.Florida inspectors use the 2009 FDA Food Code as a guideline.

Violations are broken up into three categories-

  • High Priority food service violations are those which could contribute directly to a foodborne illness or injury.
  • Intermediate food service violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury.
  • Basic violations are those which are considered best practices to implement.
