Daytime Coconut Lime Panna Cotta

Gluten and Dairy Free Coconut Lime Panna cotta

4 tablespoon coconut milk full fat

1 envelope gelatin

2 cups chilled coconut cream

1/3 cup honey

1/3 cup organic sugar

2 teaspoons lime juice

2 cups plain coconut yogurt

In small bowl combine coconut milk with gelatin gelatin (one envelope) Set aside

In a small sauce pan over medium Los heat combine coconut cream vanilla bean seeds, honey, and organic sugar until dissolved stirring frequently.  Take off heat.

Add gelatin coconut mixture previously set aside. Stir til completely dissolved and combined.

Next add lime juice and add coconut yogurt. Whisk until fully combined.

Using a cooking funnel pour mixture into serving dishes, ideally large shot glasses or small mason jars. Leave an inch of space on top for the topping. Chill for 4 hours or more.

Once fully chilled top with coconut chips or flakes and lime wedge. (Optional can also top with honey)

Serve.
