Szechuan Peanut Nachos from Chef Francis Anthony "The Love Chef" 4 tablespoons Colavita Extra Virgin Olive Oil ½ cup scallions, thinly sliced 2 tablespoons white vinegar 2 tablespoons sugar 4 tablespoons dark soy sauce* 1¼ cups chunky peanut butter 2 tablespoons chili paste* 2 cups chicken stock 2 tablespoons toasted sesame seeds* 1 platter tortilla chips
In a medium saucepan, heat the Colavita Extra Virgin Olive Oil and sauté the scallions until translucent. Add the vinegar, sugar, and soy sauce. Blend thoroughly.
Add the peanut butter and chili paste to the saucepan, blend, and add the chicken stock. Mix well. Reduce slightly over high heat for about 5 minutes. Pour over chips, sprinkle on sesame seeds, and serve.
