Gluten Free Apple Almond Cake from "Simply Gluten Free" publisher and chef Carol Kicinski
1¾ cups plus 1 tablespoons granulated sugar, divided use
1 heaping cup unsweetened applesauce
8 eggs at room temperature
3 ¼ cups almond meal
1 tablespoon freshly squeezed lemon juice
¾ cup sliced almonds
1 teaspoon ground cinnamon
Preheat oven to 350 degrees.Spray a 10 inch spring form pan with non-stick cooking spray and line the bottom with a piece of parchment paper cut in a circle to fit.
Put 1¾ cups granulated sugar into a food processor and process for 1 minute.Add the applesauce, eggs, almond meal, and lemon juice and process to a puree.With a large spatula, scrape batter into prepared pan.
Sprinkle the sliced almonds all around the top of the cake.
Mix together the remaining tablespoon of granulated sugar and ground cinnamon and sprinkle evenly all over the almonds.
Bake for about 35 – 45 minutes or until a toothpick inserted in the center comes out clean.
Let cool about 10 minutes and then remove the sides of the pan.
