Turkey Empanadas by Chris Kohatsu Author, Food with My Friends (available on Amazon)
For the filling:
2 cups cooked turkey, chopped
1 small onion, chopped
¼ cup green olives, sliced (capers may substitute)
1/3 cup golden raisins
½ cup cotija or other fresh white cheese (queso blanco), shredded
½ cup almonds (sliced or whole)
2 hard boiled eggs, quartered
1 egg, beaten
Empanada wrappers (thawed)
Pre-heat oven to 375.
In a large skillet, sauté the onions over medium-high heat, until translucent, about 3-4 minutes. Prepare the taco seasoning as directed and add the turkey, olives, raisins, almonds to skillet. Set aside to cool slightly.
Create an egg wash by beating the egg with 2 tablespoons of water.
On a baking sheet, layout the thawed empanada dough. Brush each circle with the egg wash. Add 3-4 tablespoons of the filling, along with the shredded cheese and a wedge of the quartered egg. Press together to close, using the tines of a fork to seal or fold over with your fingers to create a scalloped edge. Brush the outside with wash. Repeat until all the filling is used.
Bake for 15-20 minutes until the shells are golden brown. Serve warm.
Turkey Tater Tot Casserole by Chris Kohatsu Author, Food with My Friends
6 cups frozen tater tots?
1 red bell pepper, diced?
3-4 cups cooked turkey, diced?
2 10-oz cans of cream of chicken soup?
1 cup sour cream?1 cup milk?
1 1/2 cups shredded cheddar cheese?
1 1/2 cups frozen peas?
1 tablespoon garlic powder?1
tablespoon olive oil?
Salt and Pepper to taste
Pre-heat the oven to 400 F. Spray or grease a 13×9 rectangular baking dish and set aside.
In a large saute pan, heat the olive oil and bell pepper over medium high heat. Add the turkey and saute until peppers are softened and turkey has toasted, about 3-4 minutes. Remove from heat and set aside to cool.
In a large bowl, combine the condensed soup, sour cream and milk. Add the garlic powder and salt and pepper to taste. Once combined, add all the cheese, tater tots, peas and the turkey mixture. Mix until well combined.
Pour into the prepared baking dish and bake, uncovered for 30-40 minutes. The casserole is done when the tots are slightly browned and the cheese is melted. Remove from oven and allow to rest for 5-10 minutes before serving.
Boxty (Mashed Potato Pancakes)1 cup leftover mashed potatoes
1 cup shredded potatoes
1 cup all-purpose flour
¼ baking powder
8-12 ounces buttermilk (you will need to eyeball it)
Salt to taste
Butter, for frying
Heat a heavy pan over medium high heat and melt the butter.
Mix both potatoes in a large bowl with the flour and baking powder and add the buttermilk until a stiff dough is created. Form the dough into small cakes.
Fry the cakes until golden brown on both sides and the middle is cooked (about 6 minutes) and serve with more butter if desired.
