Daytime Recipes Cookin' with Cyndi and Jerry

Easy-Peasy Microwave Egg white Sausage Spinach Souflee 

Two small cartons of Egg whites
1/2 package of frozen loose spinach
1 package of 4 chicken apple sausage precooked
1/2 stick of butter
1 tbsp minced garlic  
1/4 cup Minced dried or fresh (dried is easier) onion
1/2 tsp Cumin
1/2 tsp Turmeric
1 tsp Curry powder
1/2 tsp Celery salt (optional if you are on low sodium diet)
Parmesan cheese
a couple handfuls of fresh greens
Olive or Canola oil spray

Spray a microwave-proof casserole dish, and add the 1/2 stick of butter.  Cut the sausage in bite-sized slices and add to the casserole, along with the 1/2 package of frozen spinach (still frozen, do not thaw).  Pour in the two containers of egg whites (and yes, you can use regular eggs if you like, or egg beaters).  Mix all seasonings in and give it a stir.  Sprinkle generously some parmesan cheese, top off with your two handfuls of fresh salad greens, then pour a bit more parmesan on top.  Microwave on high for 15 minutes.  Lower wattage microwaves may need a few extra minutes before cooked.  Remove and let sit for a couple minutes.  Slice in squares.  Serve and enjoy!  (note:  when you slice into it, it should have a souflee-like consistency, without the crust, of course.  If it's loose, it isn't done yet).
