Salad, Roasted Rainbow Beet

Ingredients

6          ounces            roasted beets

6          ounces                        golden beets

2          ounces                        baby stripe beets

2          ounces                        arugula lettuce

½         ounce              Herb Oil

4          ounces                        Goat Cheese Truffle

4          ounces                        granola

½         ea                    fancy orange segments

Procedure

1)     Roast beets at 350 degrees until tender

2)     Cool & peel

3)     In a medium bowl whisk together the herb oil (see attached recipe)

4)     Add the roasted beets, arugula, and toss to combine

5)     Place beet mixture on plate

6)     Garnish with goat cheese truffle, granola and orange segments

Ingredients

¼ qt    vegetable oil

1 oz     baby fresh spinach

1 oz     parsley, fresh (Ita) herbs

Procedure

1)     Place all ingredients and blend for 2 minutes on high

2)     Strain through cheese cloth and fine mesh strainer

3)     Let sit 8 hours at room temp

4)     Refrigerate
