Cyndi and Jerry's Sweet and Savory Pumpkin Sausage Soup
1 package of precooked chicken apple sausage sliced in bite sized pieces 1/2 large sweet onion chopped 2 tablespoons olive oil
Saute' oil and onion in a pan for a few minutes or until onion is carmelized, then add sausage and let lightly brown. Then set aside.
1 15 oz can of Pumpkin puree' (NOT pie filling) 1 1/2 cups of Nonfat milk 1 1/2 cups of Low Sodium Chicken or Vegetable broth Fresh Sage and/or other herbs or your choice 1 tablespoon of Cumin (spice) 1 tablespoon of Pumpkin pie spice 1/2 cup of brown sugar 2 tablespoons of almond or vanilla extract Sea salt and black pepper to taste Pumpkin seeds and Raw almonds for garnish
Whisk the pumpkin, milk and broth together in a saucepan, then add the herbs and spices, and whisk in the brown sugar along with the almond extract. Let simmer for 10 minutes, then add the sausage and onions from the other pan, and simmer on low for another couple of minutes, season with sea salt and black pepper to taste, and serve!
