Chef John's Hot Dog Bar - The secret to a great Hot Dog Bar is to assemble lots of condiments and toppings the guests may select to assemble their own Dog. Below are some suggested combinations with a theme. Choose your favorite Hot Dog and cook it anyway you prefer - grilled, boiled, steamed or split roasted.


Chicago dog

1          bun length jumbo all beef frankfurter with a natural casing - Vienna dog preferred
1          poppy seed bun
1          long squirt of yellow mustard
2          tablespoons sweet pickle relish
2          tablespoons onion, coarsely chopped fine
1/4       medium Roma tomatoes, seeded and diced
2          pickled sport peppers
1          kosher pickle spear or fresh cucumber spear, about 5" long
1/4       teaspoon celery salt


NY dog

Hebrew National Dog preferred

yellow mustard



Bun, steamed or toasted


Coney Island

Vienna Beef Dog


grated cheddar cheese

diced onions

yellow mustard

bun, steamed


Greek dog

diced cucumbers in sour cream

feta cheese

steamed bun or toasted


Mexican dog

10" tortilla

shredded cheddar cheese



pickled onions and jalapenos







10        jalapenos sliced into 1/8-inch or slightly smaller rings

1½       cups white vinegar

1/4       cup sugar

1          red onion, sliced 1/4-inch thick



  1. Bring vinegar and sugar to a slight simmer, just to dissolve the sugar. Add remaining ingredients and steep for ½ hour on low.


  1. Remove from heat, let cool and store in airtight container.
