HOGAN'S BEACH GARLIC FETA SHRIMP
Olive Oil 2 Tbsp
Garlic (mandolin) 1/2 Tsp
Shallot (mince) 1 Tsp
White wine 1 oz
Concasse 1 oz
Kalamata olive 6-8 pc
Lemon Juice 1/2 oz
Butter (1/2" cube, cold) Basil (chiffonade) Pinch
Feta (crumbled fine) 1/4 oz
Salt and Pepper Extra virgin olive oil (high quality) to finish
Heat oil in sauté pan. Add shrimp and cook 45 seconds on each side. Stand up shrimp. Add garlic, shallot, thyme to the oil and cook for 1 minute. Remove the shrimp. Add wine. Reduce by 3⁄4. Add tomato and cook 1 minutes. Whisk in butter to emulsify, add the shrimp, olives and basil to the pan for 15-30 seconds. Season with Salt and Pepper.
To plate, spoon 3" circle of sauce in center. Top with shrimp. Cover entire plate lightly with crumbled feta and drizzle shrimp and sauce with high quality extra virgin olive oil.
